Why this matters

Marketing multiplies whatever the experience already is. If a new guest's first visit is slow or inconsistent, paid traffic just buys bad reviews faster. Every dollar of ad spend is wasted until these four things are fixed.

Four fixes before paid launch

Fix 1

Quality varies by location

Reviews compare one store unfavorably to another.

Weighed portions, one salsa recipe card, one marinade spec, a photo standard taped at every station. Owner tastes each store weekly, unannounced.

Fix 2

Slow service at peak

Long waits mentioned at the busiest hours.

Time every ticket for two weeks, set a target, pre-stage proteins before the rush, add one runner on Friday and Saturday nights.

Fix 3

Online orders ready late

Pickup guests waiting past their quote.

Separate the online-order station from the walk-up line. Quote honest times, not optimistic ones.

Fix 4

Catering crews stretched

No hard cap on simultaneous events.

Publish a real crew cap per Saturday and stop selling past it. One ruined wedding costs more than five bookings earn.

Standards to write down

Portion
Meat weighed per taco, per gringa, per burrito. Scale at every station.
Tortilla
One supplier, one spec, pressed to order. Never held over.
Salsa
Recipe cards laminated. Batch logged with date and initials.
Plate photo
A reference photo at each station. If it doesn't look like the photo, it doesn't go out.
Ticket time
Target time posted on the line and reviewed weekly.
Greeting
One scripted greeting, both languages, plus the Taco Club ask.

Catering capacity

  • Hard cap of CONFIRM: crew cap simultaneous events per Saturday.
  • Maximum guests per crew: CONFIRM: guests per crew.
  • Every event sheet: arrival time, meats, guest count, contact, venue rules, cleanup checklist.
  • Crew leaves the venue cleaner than they found it. Photo proof sent to the office.
  • One post-event photo set per job, filmed for social. Non-negotiable.

Training

  • Every new taquero trains at one store with the owner before working another.
  • One-page laminated SOP per station, in Spanish and English.
  • Weekly 10-minute huddle: yesterday's ticket times, reviews, the week's deal.
  • Monthly blind taste test across the five stores. Scores posted.
